How do you pick which card represents the questioner in a spread?

My tarot booklet has a version of the celtic cross which includes a card representing the questioner. It mentions that it's usually The Magician for men and The High Priestess for women but it might vary depending on maturity, color of the eyes and skin.

So I'm a bit confused as to how I should be choosing the card.
